{"id":646,"date":"2023-06-12T04:50:13","date_gmt":"2023-06-12T04:50:13","guid":{"rendered":"https:\/\/cake.appscodestudio.com\/?p=646"},"modified":"2023-06-12T04:50:14","modified_gmt":"2023-06-12T04:50:14","slug":"pesto-pasta-salad","status":"publish","type":"post","link":"https:\/\/cake.appscodestudio.com\/index.php\/2023\/06\/12\/pesto-pasta-salad\/","title":{"rendered":"Pesto Pasta Salad"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>8 ounces&nbsp;short cut pasta (we used farfalle)<\/li>\n\n\n\n<li>14 ounce&nbsp;can (8.5 ounce&nbsp;dry weight) quartered artichoke hearts, roughly chopped<\/li>\n\n\n\n<li>1 pint&nbsp;cherry tomatoes, cut in half<\/li>\n\n\n\n<li>\u2153 cup&nbsp;sliced pepperoncini<\/li>\n\n\n\n<li>2 cups&nbsp;baby arugula<\/li>\n\n\n\n<li>\u00bc cup&nbsp;shredded Parmesan cheese<\/li>\n\n\n\n<li>\u2153 cup\u00a0basil pesto (homemade\u00a0or purchased, or\u00a0kale pesto\u00a0or\u00a0arugula pesto)<\/li>\n\n\n\n<li>\u00bc cup&nbsp;Greek yogurt or sour cream<\/li>\n\n\n\n<li>2 tablespoons&nbsp;mayonnaise<\/li>\n\n\n\n<li>\u00bc teaspoon\u00a0kosher salt, plus more as desired<\/li>\n\n\n\n<li><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Instructions<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Start a large pot of well-salted water to boil. Boil the pasta until al dente according to the package instructions. Drain the pasta and run cool water over it until it\u2019s room temperature, then shake off any extra water.<\/li>\n\n\n\n<li>Prepare the vegetables: roughly chop the artichokes and\u00a0slice the tomatoes.<\/li>\n\n\n\n<li>In a large bowl, mix the pesto, Greek yogurt, mayonnaise and\u00a0kosher salt. Add the drained pasta, vegetables and Parmesan cheese and stir to combine. Taste and add another \u00bc teaspoon salt depending on the saltiness of the pesto. Serve immediately or refrigerate for up to 3 days. (Allow to come to room temperature and if desired, add a pinch more salt.
