arugula<\/li>\n\n\n\n<li>1\u00a0batch\u00a0roasted cauliflower\u00a0<em>(see below)<\/em><\/li>\n\n\n\n<li>1 cup&nbsp;Kalamata olives, pitted and halved<\/li>\n\n\n\n<li>2\/3 cup&nbsp;roughy-chopped sun-dried tomatoes<\/li>\n\n\n\n<li>1\/2 cup&nbsp;crumbled feta or goat cheese<\/li>\n\n\n\n<li>1\/2 cup&nbsp;toasted pine nuts<\/li>\n\n\n\n<li>half a&nbsp;small red onion, thinly sliced<\/li>\n\n\n\n<li>1&nbsp;batch lemon vinaigrette&nbsp;<em>(see below)<\/em><\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">ROASTED CAULIFLOWER INGREDIENTS:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1&nbsp;head cauliflower<\/li>\n\n\n\n<li>1 tablespoon&nbsp;olive oil<\/li>\n\n\n\n<li>Kosher salt and freshly-cracked black pepper<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">LEMON VINAIGRETTE INGREDIENTS:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/4 cup&nbsp;olive oil<\/li>\n\n\n\n<li>3 tablespoons&nbsp;freshly-squeezed lemon juice<\/li>\n\n\n\n<li>3 tablespoons&nbsp;finely-chopped fresh&nbsp;parsley leaves<\/li>\n\n\n\n<li>2 tablespoons&nbsp;red wine vinegar<\/li>\n\n\n\n<li>1\/2 teaspoon&nbsp;Kosher salt<\/li>\n\n\n\n<li>1\/4 teaspoon&nbsp;freshly-cracked black pepper<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">INSTRUCTIONS<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">TO MAKE THE ROASTED CAULIFLOWER ORZO SALAD:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cook the pasta in a large stockpot of\u00a0generously-salted\u00a0water until it is al dente, according to package directions. \u00a0Drain pasta and rinse under cold water for about 20-30 seconds until no longer hot. \u00a0Set aside.<\/li>\n\n\n\n<li>In a large mixing bowl, combine the cooked pasta, roasted cauliflower, olives, sun-dried tomatoes, crumbled cheese, pine nuts, red onion, and vinaigrette. &nbsp;Toss until evenly combined.<\/li>\n\n\n\n<li>Serve immediately, or cover and refrigerate for up to 3 days.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">TO MAKE THE ROASTED CAULIFLOWER:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat oven to 400\u00b0F.<\/li>\n\n\n\n<li>Add the\u00a0cauliflower\u00a0to a large mixing bowl, drizzle evenly with olive oil, and toss until combined. \u00a0(You can also do this directly on the baking sheet.) \u00a0Turn the cauliflower out onto a large baking sheet, and spread out in a single layer. \u00a0Season evenly with a few generous pinches of salt and pepper.<\/li>\n\n\n\n<li>Bake uncovered for about 25-30 minutes, or until the cauliflower is lightly browned and tender. &nbsp;Remove from the oven, and set aside until ready to
