{"id":2347,"date":"2024-03-12T19:11:53","date_gmt":"2024-03-12T19:11:53","guid":{"rendered":"https:\/\/cake.appscodestudio.com\/?p=2347"},"modified":"2024-03-12T19:11:54","modified_gmt":"2024-03-12T19:11:54","slug":"lemony-artichoke-pasta-salad","status":"publish","type":"post","link":"https:\/\/cake.appscodestudio.com\/index.php\/2024\/03\/12\/lemony-artichoke-pasta-salad\/","title":{"rendered":"LEMONY ARTICHOKE PASTA SALAD"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">INGREDIENTS<\/h2>\n\n\n\n<p><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">PASTA SALAD INGREDIENTS:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1&nbsp;pound uncooked pasta&nbsp;<em>(I used gemelli)<\/em><\/li>\n\n\n\n<li>1 tablespoon&nbsp;olive oil<\/li>\n\n\n\n<li>1&nbsp;pound asparagus, chopped into bite-sized pieces&nbsp;<em>(tough ends discarded)<\/em><\/li>\n\n\n\n<li>4&nbsp;cloves garlic, minced<\/li>\n\n\n\n<li>fine sea salt and freshly-ground black pepper<\/li>\n\n\n\n<li>1&nbsp;(14 ounce) jar artichoke hearts, drained and halved<\/li>\n\n\n\n<li>2\/3 cup&nbsp;coarsely-grated Parmesan cheese, plus extra for serving<\/li>\n\n\n\n<li>1\/2 cup&nbsp;toasted pine nuts<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">LEMON BASIL VINAIGRETTE INGREDIENTS:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/4 cup&nbsp;freshly-squeezed lemon juice<\/li>\n\n\n\n<li>1\/4 cup&nbsp;olive oil<\/li>\n\n\n\n<li>1\/4 cup&nbsp;roughly-chopped fresh basil leaves<\/li>\n\n\n\n<li>1 teaspoon&nbsp;Dijon mustard<\/li>\n\n\n\n<li>1\/2 teaspoon&nbsp;fine sea salt<\/li>\n\n\n\n<li>1\/4 teaspoon&nbsp;freshly-cracked black pepper<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">INSTRUCTIONS<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Make the vinaigrette.&nbsp;<\/strong>Combine all of the vinaigrette ingredients in a jar, seal, and shake vigorously for 20 seconds or until emulsified.<\/li>\n\n\n\n<li><strong>Cook the pasta.&nbsp;<\/strong>Cook the pasta in a large stockpot of generously-salted boiling water until al dente. Transfer the pasta to a strainer, then rinse and drain it thoroughly with cold water until chilled.<\/li>\n\n\n\n<li><strong>Saut\u00e9 the asparagus and garlic.&nbsp;<\/strong>Heat the olive oil in a large saut\u00e9 pan over medium-high heat. Add the asparagus and saut\u00e9 for 5 minutes, stirring occasionally, until crisp-tender. Add the garlic and saut\u00e9 for 1-2 minutes, stirring frequently, until fragrant.<\/li>\n\n\n\n<li><strong>Combine.&nbsp;<\/strong>In a large mixing bowl (or you can reuse the stockpot), combine the chilled pasta, vinaigrette, asparagus mixture, artichoke hearts, Parmesan and pine nuts. Toss until evenly combined.<\/li>\n\n\n\n<li><strong>Serve.&nbsp;<\/strong>Serve immediately, garnished with extra Parmesan, or refrigerate in a sealed container for up to 3 days.
