{"id":2257,"date":"2024-03-11T19:22:37","date_gmt":"2024-03-11T19:22:37","guid":{"rendered":"https:\/\/cake.appscodestudio.com\/?p=2257"},"modified":"2024-03-11T19:22:37","modified_gmt":"2024-03-11T19:22:37","slug":"grilled-halloumi-salad","status":"publish","type":"post","link":"https:\/\/cake.appscodestudio.com\/index.php\/2024\/03\/11\/grilled-halloumi-salad\/","title":{"rendered":"GRILLED HALLOUMI SALAD"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">GRILLED HALLOUMI SALAD INGREDIENTS:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup\u00a0uncooked\u00a0farro<\/li>\n\n\n\n<li>1 tablespoon&nbsp;olive oil<\/li>\n\n\n\n<li>8 ounces&nbsp;halloumi cheese, sliced into&nbsp;1\/4-inch-thick strips<\/li>\n\n\n\n<li>3 ounces&nbsp;fresh arugula or baby spinach<\/li>\n\n\n\n<li>1&nbsp;English cucumber, thinly sliced<\/li>\n\n\n\n<li>1&nbsp;small red onion, peeled and thinly sliced<\/li>\n\n\n\n<li>1 cup&nbsp;fresh mint leaves, loosely packed<\/li>\n\n\n\n<li>1 cup\u00a0Kalamata olives<\/li>\n\n\n\n<li>2\/3 cup\u00a0toasted\u00a0pine nuts<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">EVERYDAY DRESSING\u00a0INGREDIENTS:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/3 cup\u00a0olive oil<\/li>\n\n\n\n<li>2\u00a0small garlic cloves, pressed or minced\u00a0<em>(or\u00a01 teaspoon\u00a0garlic powder)<\/em><\/li>\n\n\n\n<li>2 tablespoons\u00a0freshly-squeezed lemon juice\u00a0<em>(or\u00a0red wine vinegar)<\/em><\/li>\n\n\n\n<li>2 teaspoons\u00a0Dijon mustard<\/li>\n\n\n\n<li>1 teaspoon\u00a0fine sea salt<\/li>\n\n\n\n<li>1\/2 teaspoon\u00a0freshly-cracked black pepper<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">INSTRUCTIONS<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Cook the farro.\u00a0<\/strong>Cook the farro in 3 cups of water or vegetable stock according to\u00a0these instructions\u00a0until it is chewy and tender. (Cooking time will vary depending on what type of farro you use.) Drain the farro in a fine-mesh strainer and add it to a large mixing bowl.*<\/li>\n\n\n\n<li><strong>Make the dressing.&nbsp;<\/strong>Meanwhile, whisk all ingredients together in a small bowl (or shake in a covered mason jar) until completely combined. Set aside until ready to use.<\/li>\n\n\n\n<li><strong>Pan-grill the halloumi.\u00a0<\/strong>Meanwhile, heat the olive oil in a\u00a0large grill pan\u00a0or saut\u00e9 pan over high heat. Add however many halloumi strips that you can fit in an even layer, then cook for about 30 seconds per side or until the cheese is lightly browned. Transfer the halloumi to the large mixing bowl with the farro, then repeat with the remaining strips until all of the halloumi has been cooked.<\/li>\n\n\n\n<li><strong>Toss the salad.&nbsp;<\/strong>Add the remaining ingredients (arugula, cucumber, red onion, mint, Kalamata olives and pine nuts) to the large mixing bowl.
