If&nbsp;acid&nbsp;is added to milk, casein precipitates. The remaining watery&nbsp;liquid&nbsp;(the supernatant solution), or&nbsp;whey, contains \u03b1-lactalbumin and \u03b2-lactoglobulin. Both have been obtained in crystalline form; in bovine milk, their molecular weights are approximately 14,000 and 18,400, respectively. Lactoglobulin also occurs as a dimer of molecular weight 37,000. Genetic variations can produce small variations in the&nbsp;amino acid&nbsp;composition&nbsp;of lactoglobulin. The amino acid composition and the tertiary structure of lactalbumin resemble that of&nbsp;lysozyme, an egg protein.<\/p>\n\n\n\n<p>Casein&nbsp;is precipitated not only by the addition of acid but also by the action of the&nbsp;enzyme&nbsp;rennin, which is found in gastric juice. Rennin from calf stomachs is used to precipitate casein, from which&nbsp;cheese&nbsp;is made. Milk fat precipitates with casein;&nbsp;milk sugar, however, remains in the supernatant (whey). Casein is a mixture of several similar phosphoproteins, called \u03b1-, \u03b2-, \u03b3\u2212, and \u03ba-casein, all of which contain some serine side chains&nbsp;combined&nbsp;with&nbsp;phosphoric acid. Approximately 75 percent of casein is \u03b1-casein.&nbsp;Cystine&nbsp;has been found only in \u03ba-casein.
