Triglycerides consist of three\u00a0fatty acid\u00a0molecules, each linked by an\u00a0ester\u00a0bond to one of the three OH groups of a\u00a0glycerol\u00a0molecule. After ingested triglycerides pass through the stomach and into the\u00a0small intestine, detergents called bile salts are secreted by the liver via the\u00a0gall bladder\u00a0and disperse the fat as micelles. Pancreatic enzymes called\u00a0lipases\u00a0then hydrolyze the dispersed fats to give monoglycerides and free fatty acids. These products are absorbed into the cells lining the small intestine, where they are resynthesized into triglycerides. The triglycerides, together with other types of lipids, are then\u00a0secreted\u00a0by these cells in lipoproteins, large molecular complexes that are transported in the lymph and blood to recipient organs.
