It is not possible for equilibration between the \u03b1- and \u03b2-anomers of a\u00a0glycoside\u00a0in solution (i.e., mutarotation) to occur. The reaction by which a glycoside is formed involves the hydroxyl group (\u2015OH) of the anomeric carbon atom (numbered 1) of both \u03b1 and \u03b2 forms of\u00a0D-glucose\u2014\u03b1 and \u03b2 forms of\u00a0D-glucose are shown in\u00a0equilibrium\u00a0in the reaction sequence\u2014and the hydroxyl group of an alcohol (methyl alcohol\u00a0in the reaction sequence); methyl \u03b1-D-glucosides and \u03b2-D-glucosides are formed as products, as is water.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/cdn.britannica.com\/72\/16972-004-628CB4DA\/reaction-Carbohydrates-glycoside-hydroxyl-group-carbon-atom.jpg\" alt=\"Carbohydrates. The reaction by which a glycoside is formed involves the hydroxyl group of the anomeric carbon atom of both alpha and beta forms of D-glucose, and the hydroxyl group of an alcohol\"\/><\/figure>\n\n\n\n<p>Among the wide variety of naturally occurring glycosides are a number of plant\u00a0pigments, particularly those red, violet, and blue in\u00a0colour; these pigments are found in\u00a0flowers\u00a0and consist of a pigment\u00a0molecule\u00a0attached to a sugar molecule, frequently glucose. Plant indican (from\u00a0<em>Indigofera<\/em>\u00a0species), composed of glucose and the pigment indoxyl, was important in the preparation of\u00a0indigo\u00a0dye before\u00a0synthetic\u00a0dyes became prevalent. Of a number of\u00a0heart\u00a0muscle stimulants that occur as glycosides,\u00a0digitalis\u00a0is still used. Other naturally occurring glycosides include vanillin, which is found in the\u00a0vanilla\u00a0bean, and amygdalin (oil of bitter\u00a0almonds); a variety of glycosides found in\u00a0mustard\u00a0have a\u00a0sulfur\u00a0atom at position 1 rather than\u00a0oxygen.<\/p>\n\n\n\n<p>A number of important\u00a0antibiotics\u00a0are glycosides; among the best known are\u00a0streptomycin\u00a0and\u00a0erythromycin. Glucosides\u2014i.e., glycosides formed from glucose\u2014in which the anomeric carbon atom (at position 1) has\u00a0phosphoric acid\u00a0linked to it, are extremely important biological compounds. For example, \u03b1-D-glucose-1-phosphate is an intermediate product in the\u00a0biosynthesis\u00a0of\u00a0cellulose,\u00a0starch, and glycogen; similar glycosidic phosphate\u00a0derivati<a href=\"https:\/\/www.britannica.com\/dictionary\/derivatives\">v<\/a>es\u00a0of other monosaccharides participate in the formation of naturally occurring glycosides and\u00a0polysaccharides.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/cdn.britannica.com\/71\/16971-004-C3600C38\/Carbohydrates-formula-alpha-D-glucose.jpg\" alt=\"Carbohydrates. formula for alpha-D-glucose-1-phosphate\"\/><\/figure>\n\n\n\n<p>The hydroxyl groups other than the one at the anomeric carbon atom can undergo a variety of reactions.\u00a0Esterification, which consists of reacting the hydroxyl groups with an appropriate acidic compound, results in the formation of a class of compounds called sugar\u00a0esters. Among the common ones are the sugar acetates, in which the acid is\u00a0acetic acid.
