Carbohydrates in\u00a0plant cell\u00a0walls generally consist of several distinct layers, one of which contains a higher concentration of\u00a0cellulose\u00a0than the others. The physical and chemical properties of cellulose are strikingly different from those of the amylose component of starch.<\/p>\n\n\n\n<p>In most plants, the cell wall is about 0.5 micrometre thick and contains a mixture of cellulose, pentose-containing polysaccharides (pentosans), and an\u00a0inert\u00a0(chemically unreactive) plastic-like material called\u00a0lignin. The amounts of cellulose and pentosan may vary; most plants contain between 40 and 60 percent cellulose, although higher amounts are present in the\u00a0cotton\u00a0fibre.<\/p>\n\n\n\n<p>Polysaccharides also function as major structural components in animals.\u00a0Chitin, which is similar to cellulose, is found in\u00a0insects\u00a0and other\u00a0arthropods.
