TOMATO AND MOZZARELLA CAPRESE SALAD

INGREDIENTS

  • 2 cups cherry tomatoes (1 pint), halved
  • 1 cup mozzarella balls (bocconcini)halved
  • ¼ cup fresh basilchopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon dried oregano or Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon balsamic reduction (optional)


INSTRUCTIONS

  1. In a large mixing bowl or serving dish, combine tomatoes, mozzarella balls, and basil. 
  2. In a small mixing bowl, whisk together olive oil, balsamic vinegar, dried oregano (or Italian seasoning), salt, and pepper. 
  3. Pour dressing into the salad and toss to combine. Top with a drizzle of balsamic reduction (optional).
