INGREDIENTS
FOR THE DRESSING:
- ¼ cup plain low fat Greek yogurt
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 teaspoon apple cider vinegar
- 1 teaspoon poppy seeds
FOR THE SALAD:
- 6 cups baby spinach
- ½ small red onion, thinly sliced
- 2 cups fresh strawberries, sliced
- 1 cup fresh blackberries
- 1 cup fresh raspberries
- ¼ cup sliced almonds
INSTRUCTIONS
- In a small bowl, whisk together all dressing ingredients until well combined.
- Place remaining salad ingredients in a large bowl. Drizzle with dressing and gently toss to combine. (I recommend using most, but not all of the dressing at first. You can add more as needed.) If you prefer, you can assemble the salads on individual plates or bowls and drizzle each with dressing.
- Serve immediately.
