Sunshine Cake Recipe

Ingredients

  • 240 gm egg whites
  • 1/2 teaspoon cream of tartar
  • 5 egg yolk
  • 150 gm cake flour
  • 1/2 cup whipping cream
  • 1 teaspoon orange zest
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 teaspoon orange zest
  • 100 gm powdered sugar
  • 3/4 teaspoon vanilla extract

How to make Sunshine Cake

  • Step 1 Whisk egg whites until stiff peaks are formedTo make this amazing cake, in a large-sized mixing bowl, beat egg whites and salt. Whisk the egg whites until foamy and stiff peaks forms. Add granulated sugar to the egg white mixture and mix well. Keep this bowl aside. At this stage, start preheating the oven to 160 degrees Celsius.
  • Step 2 Beat egg yolks and add to the egg whites mixtureTake a fresh clean bowl and beat in the egg yolks. Keep on stirring until the yolks turn thick and lime yellow in colour. Now add 1/3 of the egg white mixture into the yolks and whisk completely. Now transfer this mixture of egg yolks and egg whites back to the bowl of remaining egg white mixture.
  • Step 3 Add flour, tartar & orange zest to the egg mixture to make a cake mixAdd 1 tsp orange zest, cream of tartar and cake flour to the egg white-yolk mixture and fold until all the contents are properly incorporated and no lumps are left.
  • Step 4 Bake the cake mix in the heated oven for 45 minutesSpread the mixture onto a non-greased cake tin and even out the surface using a spatula. Throw the cake tin in the oven and bake the cake for around 45 minutes.
  • Step 5 Prepare the orange sunshine cream for the cakeWhile the cake is being baked, start making the orange cream topping for the cake. In a bowl, combine powdered sugar, heavy whipping cream, 1/2 tsp orange zest and vanilla extract. Whisk all the contents nicely. You can even add more cream if you wish to. After the cake is baked, drizzle the cream and allow it to cool down. Enjoy.
