Ingredients
- 2 cup cake flour
- 1 cup sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 3 egg
- 1 teaspoon baking powder
- 3/4 cup butter
- 1/4 teaspoon salt
For Toppings
- 10 strawberry
- 8 gm Gelatin
- 14 ounce condensed milk
- 1 cup heavy cream
How to make Strawberry Mousse Cake
- Step 1. Prepare the gelatin as per the instructions on the pack & refrigerate till half-set. Don’t let it set completely, or it will not blend well into the mousse.
- Step 2. Crush the strawberries by hand or with the back of a spoon/fork. Add the condensed milk, half-set gelatin & heavy cream
- Step 3. Beat for 1-2 mins with a hand blender & refrigerate till it sets completely.
- Step 4. For base cake, Sift flour, baking powder & salt & set aside.
- Step 5. Cream together butter & sugar. Add the eggs & beat well. Fold in the dry ingredients, milk & vanilla extract. Beat well for 3-4 mins to form a smooth creamy batter.
- Step 6. Pour into a greased cake pan. Bake in a 350F pre-heated oven for 28-30 mins.
- Step 7. After baking, remove from the oven & cool completely
- Step 8. To frost the cake- Cut the completely cooled cake horizontally into 2 layers.
- Step 9. Scoop a big dollop of the chilled mousse onto the bottom layer. Spread with a spatula into an even thick layer.
- Step 10. Place the top layer. Frost the rest of the cake with the mousse.
- Step 11. To decorate : Beat chilled heavy cream with confectioners sugar till stiff peaks form. Fill a piping bag (fitted with a star nozzle) with the whipped cream & decorate the cake.
- Step 12. Garnish with whole or sliced strawberries
