Ingredients:
- 1 cup heavy cream
- 3 ounces dark chocolate (70% cacao or higher)
- 1/4 cup brewed espresso or strong coffee
- 1 tablespoon sugar (optional)
- 1/2 teaspoon vanilla extract
Method:
- Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method).
- In a separate bowl, whisk the heavy cream until soft peaks form.
- In another bowl, combine the coffee and vanilla extract.
- Once the chocolate has melted, gently fold the whipped cream into the chocolate and mix until smooth.
- Add the coffee mixture and fold until incorporated.
- Spoon the mousse into serving glasses and chill for at least 2 hours before serving.
