Coffee and Chocolate Mousse

Ingredients:

  • 1 cup heavy cream
  • 3 ounces dark chocolate (70% cacao or higher)
  • 1/4 cup brewed espresso or strong coffee
  • 1 tablespoon sugar (optional)
  • 1/2 teaspoon vanilla extract

Method:

  1. Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method).
  2. In a separate bowl, whisk the heavy cream until soft peaks form.
  3. In another bowl, combine the coffee and vanilla extract.
  4. Once the chocolate has melted, gently fold the whipped cream into the chocolate and mix until smooth.
  5. Add the coffee mixture and fold until incorporated.
  6. Spoon the mousse into serving glasses and chill for at least 2 hours before serving.
