Ingredients
- 3 cup pitted dates
- 2 teaspoon baking soda
- 10 egg
- 1 teaspoon vanilla extract
- 1 teaspoon allspice
- 1 teaspoon green cardamom
- 1 cup corn oil
- 2 cup water
- 3 cup caster sugar
- 5 cup all purpose flour
- 2 cup milk
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
How to make Date Cake
- Step 1 Clean and wash the datesClean and wash the dates and remove the seeds or you can use pitted dates.
- Step 2 Boil the datesAdd dates and water to a bottom-heavy pot along with 1 teaspoon baking powder- bring to a boil for 1 minute, then simmer for another 5 minutes. Take the dates off the heat- let them rest until completely cooled.
- Step 3 Mix sugar and datesPut the dates into a mixer. Now add sugar and begin mixing at a slow speed until dates and sugar combine well. Now add oil gradually in batches.
- Step 4 Whisk eggs and add them to the mixtureIn a separate bowl, mix the eggs using a fork, then pass them through a conical strainer. Now add eggs into the date mixture. Blend again and once eggs are incorporated well, now add the dry ingredients.
- Step 5 Fold the ingredientsTake out the mixture from the grinder into a large bowl. Sift the flour, baking soda and other spices, Fold into date mixture and add the warm milk at last!
- Step 6 Bake the cakePlace one pound of the mixture into a small 8 x 4-inch baking tin greased, with baking paper and bake at pre-heated oven 160 C – 320°F 45 to 60 minutes.
- Step 7 Ready to be servedOnce the cake is baked, let it cool down a bit and then take it out from the tray. Cut into pieces, garnish with a topping of your choice and serve.
