Ingredients
- 1 cup grated coconut
- 3 egg
- 1 teaspoon baking powder
- 1/2 cup coconut milk
- 1 cup all purpose flour
- 1/2 cup caster sugar
- 1/2 cup unsalted butter
For Garnishing
- 1/2 cup condensed milk
- 1 cup coconut flake
- 5 blackberry
- 1/2 cup whipped cream
- 1 handful canned cherries
How to make Coconut Cake
- Step 1. Whisk sugar and butterTo begin with this delicious cake, whisk butter and sugar till it turns fluffy. Then crack open the eggs and whisk the batter till it turns foamy.
- Step 2. Prepare the batterAdd flour, baking powder and coconut milk and mix until they mix well. Carefully add whole milk in small amounts. Lastly, add in the grated coconut and mix the batter well.
- Step 3. Bake the cakePreheat the oven to 176-degree Celsius. Take a baking tray and grease it with the remaining butter. Pour the mixture into the tray and bake it for around 20-30 minutes. Check before removing from the oven.
- Step 4. Garnish the cakeThen take a large bowl and add condensed milk and fresh cream, whisk the mixture. Once the cake is baked, nicely layer the cake with the creamy mixture and top it with coconut flakes along with some cherries and blackberries.
