Ingredients:
- 1 tablespoon finely ground Turkish coffee (per cup)
- Water (cold, 1 small cup per serving)
- Sugar (optional, see variations)
Steps:
- Add Coffee and Water: Add 1 tablespoon of finely ground Turkish coffee to a cezve, followed by cold water. Typically, use about 1 small coffee cup (90 ml) of water per serving.
- Add Sugar (Optional): You can add sugar at this stage, adjusting to your taste:
- Unsweetened (no sugar)
- Az şekerli (a little sugar, 1/2 teaspoon)
- Orta şekerli (medium sweet, 1 teaspoon)
- Şekerli (sweet, 1 1/2 teaspoons)
- Heat Slowly: Place the cezve on low heat. Stir once to mix the coffee and sugar, but don’t stir again while brewing.
- Watch for Foam: As the coffee heats, foam will form. When it begins to rise, remove it from the heat just before it overflows.
- Repeat: Return it to the heat, let it rise again, and remove. Repeat 2-3 times for the perfect texture and foam.
- Serve: Pour the coffee into small cups, making sure to divide the foam evenly. Let the grounds settle before drinking.
